I love spring and Easter so what better way to celebrate than a moist, fluffy vanilla cake filled with lemon and raspberry buttercream and covered in creamy Swiss meringue buttercream with a whole Easter scene; bunnies, eggs and all painted in buttercream, NO fondant! This delicious vanilla Easter bunny rabbit cake has a whimsical Easter scene made from dreamy Swiss meringue buttercream on the outside and a zingy raspberry and lemon buttercream within. Painting with buttercream is so much easier than you think and it makes from some AMAZING cake decorating! I will say you HAVE to chill the cake a bunch to keep it nice and firm while you work, otherwise things can get a bit messy.
